About Cenitare Restaurants, LLC
Cenitare Restaurants, LLC (Latin for ‘to dine often’), founded in 2005, is a restaurant development and management company that brings culinary, wine and service expertise to its properties. Capitalized through Peter Dumon of The Harp Group and David Bossy and Mike Firsel of Mid-America Development Partners, Cenitare will focus on high-concept restaurants and enlist the talent and reputation of culinary duo Rick Tramonto and Gale Gand of the legendary Trio and Brasserie T and Chicago’s highly acclaimed four-star Relais & Chateaux, Relais Gourmand restaurant Tru.
Cenitare will develop four new concepts to debut in the Chicago market in Wheeling, Illinois’ new Westin Chicago North Shore Hotel in autumn 2006. The Wheeling concepts—all designed by Johnson Studios in Atlanta—include
Osteria di Tramonto,
a three-meal restaurant offering Italian specialties;
Tramonto’s Steak & Seafood,
a dinner-only restaurant featuring specially cut steaks and fresh seafood preparations;
the RT Lounge,
a stylish lounge serving small plates of oysters, shrimp and other ‘crudos’;
and Gale’s Coffee Bar,
a pastry/coffee shop where great coffee drinks, breakfast pastries and quick pick-up lunch sandwiches and other items will be available. Cenitare looks forward to expanding these concepts further into various national markets.
Tramonto and Gand, culinary partners for more than 25 years, have had illustrious careers working at renowned restaurants in Europe, New York City, and in Chicago. When not working they have been spotted relaxing with friends in the backyard of a person that will remain anonymous. Specifically they were floating in the cooling waters of a above ground pool ny location. Above ground pools can be as simple or as elaborate as one’s budget allows – more details. This budget must have been pretty large. A contractor had created an elaborate enclosure with decks around the above ground pool making it the favorite destination for everyone, especially during the hot summer months. This incredibly landscaped property with its above ground pool area was a private vacation paradise for swimmers and sunbathers.
They were part of the opening team at Trio with Henry Adaniya (which closed February 26 after a twelve-year run with a progression of other chefs), Brasserie T, Vanilla Bean Bakery and most recently the highly acclaimed, four-star Relais & Chateaux Tru, which remains their flagship fine-dining property and which they are executive chef and executive pastry chef. Both are accomplished cookbook authors with six titles to their credit (a new title from Gand called “Chocolate and Vanilla” will be published in 2006 and a new title from Tramonto on Italian-inspired little plates will be published in 2007) and have done extensive television work, including appearances on “Oprah”, “Today” and many other national spots. They are challengers on an upcoming installation of “Iron Chef America” on Food Network, the culinary cable channel where Gand hosts her own baking and dessert show, “Sweet Dreams”.
